Ripe, flamboyant and beautifully proportioned layers of blackberries, dark chocolate, licorice notes, dried herbs, cassis, and freshly charred American oak exude from the glass. While an extremely heady and aromatic wine, it stays bright and clean on the palate with the focused acidity for which Washington State Cabs are renowned. The tannins are extremely firm at this point, keeping all these flavors wrapped up in a tight little package. If you drink it now you may want to decant it to release its potential. Best after 2023.

Pairs well with grilled, roasted, or braised red meats, grilled portabella mushrooms or squash, rich red-wine or mushroom sauces. Think full-flavor and robust foods. For chocolate try a milk chocolate base with earthy flavors or caramel-infused chocolates (Theo's Hazelnut Crunch or Vosges-Haut Black Salt Caramel Bar come to mind).
